In honor of "Layered" coming out next week (April 19th), I wanted to pay tribute to some of my favourite layer cakes from throughout my years writing and reading dessert blogs. Consider this my ode to the most tender cakes, luscious fillings, exceptional frostings, and the most gorgeous, stylish exteriors from around the web.
From the early days when I just started reading dessert blogs (circa 2008) to just a few weeks ago, I always have at least a few dozen cakes that I am currently crushing on. For one reason or another, these cakes and their designers have stuck with me over the years. Credit Pinterest or just my good memory, but I can recall each of these cakes and when/why I fell in love.
So in no particular order, here are some of my all-time favorite recipes and designs for my online cake pals:
Lyndsay’s Chocolate Peanut Butter and Jam Cake: her use of an extra layer of raspberry buttercream frosting is the perfect shade of pink to go along with the cake’s drippy magic!
Cynthia’s Strawberry & Cream Chiffon Cakes because I’ve got mad mini cake love.
When I first saw Tiffany’s Chocolate Stout Cake with Speculoos and Torched Meringue, I instantly knew I had stumbled on a gold mind of gorgeous cake creations. Everything she makes is swoon-worthy, but this was her first to take my breathe away.
Linda is one of the biggest layer cake queens out there with more delicious and beautiful cakes in her repertoire than you can imagine. Everything she touches is pure magic, but this Neapolitan Cake with pink buttercream, french macarons and cherry blossoms on top from a couple years ago has always stuck with me - so pretty!
Megan’s Dark Chocolate, Passion Fruit, and Hazelnut Layer Cake is right up my alley. If anyone were to ever want to make me a cake, this would be my request: passion fruit curd, praline, hazelnut french buttercream, and CHOCOLATE! Hint, hint - someone please make this for me.
Michelle’s Pomegranate Citrus Meringue Cake is everything you could ever ask for in a layer cake: homemade lemon curd, vanilla cake, crispy crushed meringue and POMEGRANATE buttercream! Plus, it’s absolutely gorgeous.
Katie’s Fruity Pebble Funfetti Cake makes anyone feel like a kid again. So cute!
Molly’s Chocolate Tahini Cake with Rosemary Buttercream: I love anything and everything tahini and remember falling in love with this gorgeous cake years ago and being inspired to incorporate more savory, fresh herbs into my cakes.
Tieghan’s Coconut Eton Mess Cake is a recent cake crush of mine. While some of the others have stuck with me for years, I am glad there will always be room in my heart for NEW amazing creations like this.
Elizabeth's Grapefruit Cake because this gal's got mad artistic AND pastry skills that I am totally envious of, and this cake is no exception with it's hand-painted grapefruit!
Naomi’s Strawberry Tres Leches Cake from way back when I fell in love with her site, Baker’s Royale. Not only did this cake make my mouth-water at first sight, it was her photography that really inspired me to figure out how to work my camera when I first started this blog.
Rachel’s Vanilla Almond Cake with Cherries - basically just because I think it is BEYOND cute! And I love almond everything.
Heather’s Cherry Vanilla Layer Cake is one of her early creations that got me hooked on her blog SprinkleBakes years ago. She is the ultimate sweet genius, making something crazy creative week after week!
Thalia’s Dark Chocolate and Lavender Cake is still near the top of my “must bake” list. I seriously must bake it soon! Sounds soooo good.
Katherine’s Persian Love Cake because she single-handed lead the extravagant drippy cake evolution and we can’t thank her enough.
