I have been feeling especially blessed lately. The sun is shinning bright and I can even feel a shift in energy from the city around me. It has only been about five days without rain, but I am enjoying every minute of it. Yesterday was the perfect preview for summer - dinner on the patio in the center of sunny Coal Harbour. Even Remy, our French bulldog, was calmed down enough by the serene setting long enough for us all to enjoy our outdoor meal with her at out feet.
What was even more of a blessing was getting to celebrate Mother's Day with my mom this year. I am so thankful to have such a strong, generous, and loving woman in my life and as a role model. While last year we were in different countries, this year was absolute perfection.
After the best brunch out at Yolks, mom's favorite meal, we all spent the day soaking up the sun on my parents' patio, walking the dogs along the water, and a lovely homemade dinner by my brother and his girl friend. I brought scones.
These Mini Strawberry Scones were the perfect addition to our day. And by perfect, I mean you can eat several throughout the day due to their size. I used juicy organic strawberries, a combination of spelt and whole wheat flour, and buttermilk for extra flavor. The berries add just the right amount of color and flavor and the sugary tops add a touch of crunch for texture.
