I never thought I would ever complain about the heat in Canada. But boy, it sure has been one hot summer so far! Growing up in California, I thought I was used to the sun. However, our non-air conditioned apartment with floor to ceiling ,east-facing windows leaves me (and especially the dog) hot, tired, and wanting to get away from the oven as much as possible. Seeing as though I am a baker and have this undeniable need to make something sweet almost daily, I need to find as many no-bake alternatives as possible. Since my ice cream maker is still missing from the move, and my popsicle mold does not fit in our freezer (who makes a freezer with drawers anyways?), I decided to make GRANITA! And not just any granita, but I developed 5 different flavors! Ranging from light to rich, and even some adult versions, these simple granitas are comprised of some of summer’s favorite fruits and flavor combinations. We have: – WATERMELON MARGARITA – MANGO MOJITO – PEACH SWEET TEA – BLACKBERRY - LIME - ELDERFLOWER – LEMON - BLUEBERRY- THYME

Which flavor will you try first? My husband thinks the Peach Sweet Tea tastes as good as a cookie (must be the addition of vanilla), while I love how vibrant all the flavors come out in the Lemon Blueberry Thyme. Try either the Mango Mojito or the Watermelon Margarita instead of cocktails at your next event!
