'Tis the season!! Its just about that time to start whipping up all our favorites for the impending holidays. Whether it be for a holiday party, cookie exchange, sweet edible gifts, or Christmas Eve with the family, it's time to stock up on recipes and get busy in the kitchen. I have my arsenal of holiday recipes, and I am please to share one of my new favorites: Spiced Eggnog Macarons.
I think there are two types of people: those that love eggnog and those that hate it. It's a bit rich for me, but I definitely fall into the eggnog-drinker category. Either made from scratch with real eggs or from a carton, this stuff says HOLIDAY all the way. I tend to water mine down with a bit of milk, but a splash of liqueur and a pinch of fresh ground nutmeg would make an excellent adult drink So whether you fall into the eggnog lover category or the latter, I think you will all love these bitty French pastries.
Macarons are little gems themselves. Two crispy yet chewy shells sandwiched with luscious filling make for a lovely, gourmet bite-sized treat. Packaged with a bit of flare, and you have the perfect gift. These macarons were made with a spiced shell and eggnog ganche. The shells contain vanilla bean seeds and fresh nutmeg, topped with cinnamon chips. The eggnog ganache is prepared with creamy white chocolate. The flavors blend beautifully with every bite.
Spiced Eggnog Macarons: makes about 2 dozen sandwich cookies
**Please note: the chocolate measurement is by weight, where as the eggnog is liquid ounces.
